Sausage and Sweet Potato Soup

Ingredients:

  • 2 Tablespoons of olive oil
  • 2 Tablespoons minced garlic
  • 1 diced medium onion
  • 1 lb Italian hot sausage, removed from the casing (check the ingredients for whole 30.  We usually use Polidori brand)
  • 1 lb sweet potato, cubed
  • 6-12 oz. white mushrooms, sliced (I like more mushrooms)
  • 1-2 quarts of chicken stock (check the ingredients for sugar.  Seriously)
  • Garlic salt – to taste
  • Black pepper – to taste
  • 6 oz. Spinach

Directions:

Heat slow cooker on low or high, depending on time.  Low for 6 hours, high should cook for 3 hours.

In a large skillet over medium heat, splash in olive oil.  Add garlic and onions, and cook until the onions are soft.

Add sausage to the skillet, and cook until brown. Drain.

Add sweet potatoes, mushrooms, chicken stock, garlic salt, pepper, and sausage to the slow cooker.  Add enough chicken stock to cover everything.

Cook on for 3-6 hours depending on slow cooker temp.

About 30 minutes before eating, gently mix in the spinach.
