Ingredients:
- 2 lb cooked, peeled, and deveined shrimp
- 1 lb loose Italian sausage
- 3 diced bell peppers (red, yellow, orange)
- 1 medium yellow onion, diced
- 1 zucchini, quartered and cubed
- 1 yellow squash, quartered and cubed
- 1 1/2 cups chicken stock
- 3 cloves garlic
- 3 tsp Old Bay seasoning
- pinch of red pepper flakes
- Olive oil
- salt and pepper
Directions:
- Brown Italian sausage, set aside
- In a large skillet on medium heat, add Olive oil to coat bottom. Add shrimp, and Old Bay seasoning. Cook about 5 minutes.
- Add sausage, peppers, onion, zucchini, squash, garlic, red pepper flakes
- Mix together, and add chicken stock
- Cover and cook for about 10 minutes, stirring occasionally.
- Remove lid, cook until chicken stock is mostly evaporated.
- Salt and pepper to taste. Garnish with parsley if desired.
