Ingredients:
- 2 lbs chicken, cut in to small strips
- 1/2 cup corn starch
- 4 tablespoons olive oil
- 1 yellow, 1 orange bell pepper
- 2 small or 1 large head of broccoli, heads only, cut to bit size pieces
- 2 tablespoons rice vinegar
- 1 inch piece of fresh ginger, finely chopped
- 2 tablespoons minced garlic
- 1 tablespoon sesame oil
- 1/3 cup hoisin sauce
- 2 tablespoon honey
- 4 tablespoons Siracha
- 1 bunch green onion, chopped and separated in to white and green pieces. Discard root ends.
- Rice
Directions:
Measure out and cut all ingredients, cook rice per directions or in rice cooker.
In a medium bowl, toss chicken strips with corn starch.
In a large pan, heat olive oil over medium heat. Add chicken 1 layer thick, and cook on each side about 3-4 minutes. Set each batch aside until all chicken is cooked. Leave any fond in the pan.
Add peppers, ginger, garlic, broccoli, and white sections of green onion to the pan. Add small amount of additional olive oil if pan is dry. Stir frequently, cooking about 2 minutes. Peppers should begin to soften
Add hoison sauce, vinegar, honey, Siracha, and 2 tablespoons of water. Stir constantly about 2 minutes, and re-add the chicken. Mix together for about a minute, coating chicken in sauce. Add sesame oil, remaining green onion, stir, and remove from heat.
Serve over rice.
